marley's menu | apple & oat bites.


These are essentially muffins, but because I bake them in ultra tiny muffin tins I like to call them bites. With their not-so-sweet flavour, it's an appetising snack packed full of goodness best eaten fresh. This easy recipe will make you 6 normal size muffins, or approx 28 mini-muffin bites, so I usually freeze some of them. They easily defrost overnight for a yummy morning snack with Marley's seal-of-approval. Using the walnut oil lends a nutty taste and is a great source of omega-3 fatty acids although sunflower oil will work just fine. Feel free to toss in a handful of sultanas too!

ingredients
50g plain flour
50g wholemeal flour
25g porridge oats
1.5 tsp baking powder
1/2 tsp cinnamon
1 apple, peeled and grated
60ml yoghurt
60ml milk
1 egg
50ml walnut oil (or sunflower)

method
Preheat oven to 190 degrees Celsius.  In a large bowl thoroughly combine the dry ingredients. Add the grated apple and stir well. In a jug, combine the yoghurt, milk, egg and oil. Mix into the dry ingredients, stirring until just combined. Fill the mixture into your muffin tray and bake for 12-15 minutes for mini size, or 25-30 for normal size muffins. Transfer to a wire rack to cool and eat within 24 hours, or freeze them.
