marley's menu | one pot savoury chicken & rice.

As my household's chief dishwasher, I'm always on a mission to make the least amount of dishes possible. I had originally set out to make some kind of paella but it ended up tasting less and less Spanish, hence it's appropriately invented name, the one-pot savoury chicken and rice. I grabbed a handful of roasted chicken from the night before for this one, but it could be easily substituted with red kidney beans.

1 tablespoon oil
1 onion, sliced
2 teaspoons curry powder
1 teaspoon turmeric
2 cloves garlic, crushed
1 1/2 cups long-grain rice
400g can chopped tomatoes
1/2 cup water
2 cups frozen mixed veggies
1 cup cooked chicken, shredded

Heat oil in a large frying pan. Cook onion, curry powder and turmeric for 3-4minutes, stirring frequently. Add garlic and cook for a further minute. Stir in rice, tomatoes and water. Reduce heat and simmer uncovered for 15-18minutes until rice is cooked (you may need to add more water during this cooking period). Stir regularly to prevent rice from sticking to the pan, All liquid should be absorbed at this stage. Stir in vegetables and chicken and cook for a further 4-5 minutes until vegetables are tender, then serve up.
